Essentially they are designed in a way that ensures there is no contamination of the pumped medium and that it is safe for human consumption; this is what makes a sanitary pump.
The materials of construction of a hygienic pump, such as stainless steel, are those that cannot contaminate and that do not absorb the pumped fluid, and all surfaces of the pump must be smooth to eliminate the chance of bacteria harbouring. Clean in Place pumps, otherwise referred to as CIP pumps, are where the pump can be cleaned without having to remove it from the installation. This is a common requirement of a hygienic pump.
